He was tortured for 10 days, enough time for his hair to turn white. This misconception probably arose because in the anime(for those who only watched the anime) it turned white in a few seconds.
'1000-7' has huge significance for the character Ken Kaneki in Tokyo Ghoul. This term refers to the character's sanity/insanity. Under Jason's torture, Ken had to count down from 1000 in sevens. Ken remained conscious under torture and counting became a mental form of torture.

Ken Kaneki cracks his fingers as a consequence of a traumatic torture cycle brought upon him by Yamori. He does not break them, only cracks them. It symbolizes his duality and is the pinnacle of his “transformation” into a one-eyed ghoul, which occurs before and during fighting an opponent.
As Kaneki had to repeatedly heal his toes over and over and over, all the while being tortured and borderline starved. His body was basically getting weaker and weaker because the cells were wearing thin, which is why his hair turns white, as happens with people when they get old.

In the anime “Tokyo Ghoul”, Yamori cracks his finger every time he tortures Ken Kaneki. This teaches him to crack his own fingers after his escape.

Hair turning from light to dark seems to symbolize regaining humanity. So Juuzou, who started out with white hair…his hair would have turned black to symbolize his reclamation of his humanity.
